What is a rockwell hardness rating?
This is a unit of measurement sometimes referred to as HR and is used to calculate the strength of materials. The higher the rating the longer the knife retains its edge for but the knife maybe more brittle.

A knife with a rating of 60° or above is a favourite amongst experienced chefs where as knives that may be used in a more hardy environment may favour a lower rating. This would mean it looses its edge quicker however they are less likely to become damaged is stored incorrectly or used on unsuitable surfaces such as stainless steel.
