The 1778 series knives are made from ultra-fine layers of high-alloy, double X VG 12 carbon steel, giving an extreme hardness of more than 61° HRC. Due to this these knives have a considerably prolonged edge life, giving you the perfect cut for many years. Finished with food safe stainless steel to protect the core, and a Plumwood handle, these knives are both practical and attractive.
